Lever and manual pre-infusion
When the barista lowers the lever, hot water from the boiler flows into the group and wets the coffee. The longer the lever stays down, the longer the pre-infusion.
An experienced barista waits for the first drops at the spout and only then raises the lever, because the whole dose of coffee is already saturated. It is simple to operate and, according to the manufacturer, reliable and durable.

Design
The first Victoria Arduino lever machines came onto the market in 1946, after the end of the Second World War.
